目的了解无锡市锡山区餐饮业厨房和熟食间各类器具及配餐人员手部的卫生状况,以便采取控制措施。方法随机选择锡山区不同规模档次的餐饮单位,对其厨房间和熟食间的砧板、抹布、水池、冰箱和配餐人员的手部卫生状况进行调查。结果小吃店、饭店和学校食堂抹布的合格率分别为7.69%、21.13%、17.74%(χ2=1.36,P>0.05);砧板的合格率分别为7.69%、14.49%、17.31%(χ2=0.78,P>0.05),水池的合格率分别为15.38%、27.69%、33.33%(χ2=1.75,P>0.05),冰箱的合格率分别为23.08%、5.41%、42.50%(χ2=14.33,P<0.01),配餐人员手部的合格率分别为15.38%、16.22%、29.17%(χ2=2.44,P>0.05)。结论改善锡山区餐饮业厨房间、熟食间的卫生状况刻不容缓,卫生监督机构要加强对餐饮业厨房间和熟食间的卫生管理和操作环节的清洁消毒工作。
Objective To understand the health status of all kinds of utensils and catering staff in the kitchen and cooked food restaurants in Xishan District of Wuxi City in order to take control measures. Methods randomly selected dining units of different scales in Xishan District to investigate the hand hygiene status of cutting boards, rags, sinks, refrigerators and catering staff in their kitchen and cooked food rooms. Results The pass rates of snack bars, restaurants and canteen rashes were 7.69%, 21.13% and 17.74%, respectively (χ2 = 1.36, P> 0.05). The pass rates of cutting boards were 7.69%, 14.49% and 17.31% (P <0.05, P> 0.05). The passing rate of the pool was 15.38%, 27.69% and 33.33% respectively (χ2 = 1.75, P> 0.05). The pass rates of the refrigerators were 23.08%, 5.41% and 42.50% <0.01). The pass rates of catering staff were 15.38%, 16.22% and 29.17% respectively (χ2 = 2.44, P> 0.05). Conclusion It is imperative to improve the sanitary status of kitchens and cooked food establishments in the catering industry in Xishan District. The health supervision agencies should step up their efforts to clean up and disinfect the hygiene management and operation of kitchens and cooked food establishments in the catering industry.
