荸荠罐头加工制作简单,设备投资不大,产品销路好。因此,发展罐头加工业,对于农村搞活经济、脱贫致富是一条好门路。其主要操作技术要领与方法如下:一、原料加工荸荠应选用球茎稍大,形状扁圆,皮色紫红,皮薄且肉质嫩脆,淀粉含量少,味甜,食无残渣,每公斤约50~70粒的荸荠为原料。对于皮厚肉质硬,富有淀粉,味道差,食有残渣的荸荠不宜选用。选料时应注意荸荠要新鲜,采收季节适宜,并除尽破损、烂、病虫害、果实横径小于30毫米的小荸荠,确保原料均匀整齐。
