生吃螃蟹想来应该是久已有之的习惯,不过,宋以前的文献中很少出现相关线索。宋人则以各种形式记录下吃生螃蟹的乐趣,显示那个时代社会各阶层都热衷于这一品蟹之法。据宋人高似孙《蟹略》介绍,当时把生吃的螃蟹叫做“蟹生”。蟹生的做法大体有两种,一种是用酒或酒酿腌渍半天,叫“酒泼蟹生”;一种则是拌上佐料立刻开吃,有个非常生动的称呼为“洗手蟹”。
Raw crabs should have come a long time ago, but there are few clues in the literature before the Song dynasty. The Songs recorded the joy of eating raw crabs in various forms, showing that all sectors of society in that era were passionate about this product. According to the Song Dynasty grandchildren “crab slightly” introduction, then the raw crab called “crab raw ”. There are two ways to make crabs: one is pickling with wine or fermented wine for a long time, called “wine crab”; one is to eat immediately with a sauce, and there is a very vivid call for “ Wash hands crab ”.
