近年来反式脂肪酸(TFA)在我国引起政府、学术团体、学者以及有关企业的关注。本文就膳食TFA的摄入对人体健康的影响做一综述。膳食中的TFA主要是由部分氢化植物油或鱼油引入。与饱和脂肪酸、顺式单不饱和脂肪酸及多不饱和脂肪酸相比,TFA可降低血浆高密度脂蛋白胆固醇,提高总胆固醇和高密度脂蛋白胆固醇的比例,增加冠心病发作的风险。另外,TFA还可增加致命性的心脏猝死,增加患代谢综合症以及糖尿病的风险。
In recent years, trans fatty acids (TFA) in our country caused the government, academic groups, scholars and enterprises concerned. This article reviews the impact of dietary TFA intake on human health. The dietary TFA is mainly introduced by partially hydrogenated vegetable oil or fish oil. Compared with saturated fatty acids, cis-monounsaturated fatty acids and polyunsaturated fatty acids, TFA can lower plasma high-density lipoprotein cholesterol, increase the proportion of total cholesterol and high-density lipoprotein cholesterol, and increase the risk of coronary heart disease. In addition, TFA can increase fatal sudden cardiac death and increase the risk of metabolic syndrome and diabetes.
