木耳菜,学名大叶落葵菜,别名豆腐菜,是近年中国农科院从日本引进的一年生食叶藤类蔬菜。成菜株高可达2米,蔓呈绿色或紫色,叶形如心脏,长达19厘米、宽16.5厘米,单叶重可达60克。其叶肉肥厚,味似鲜木耳,鲜美可口,鲜炒、作汤均可。据测定,每100克鲜叶含维生素C达46.8毫克,还含有蛋白质、可溶性固形物、糖分等营养物质。另外,其全株均可供药用,具有清热凉血、外敷治痈毒,疗效极佳。木耳菜喜温和气候,生长适温20—30℃。8℃以下,停止生长。
