目的建立一种快速测定乳与乳制品中蛋白质含量的方法。方法用双缩脲反应测定蛋白质含量。结果工作曲线在(0-0.20)g/100 mL蛋白质浓度范围内遵守朗伯比尔定律,线性关系良好。曲线的回归方程为:Y=0.004 868+3.018X,相关系数r=0.999 3,加标回收率(95.00-104.00)%,方法的检出限0.02g/100 mL。结论该方法操作简便、快速、准确,灵敏度和精密度高,适用于乳与乳制品中蛋白质的快速测定。
Objective To establish a rapid method for the determination of protein content in milk and dairy products. Methods The biuret reaction was used to determine the protein content. Results The working curve follows the Lambertil rule in the (0-0.20) g / 100 mL protein concentration range and has good linearity. The regression equation of the curve is: Y = 0.004 868 + 3.018X, the correlation coefficient r = 0.999 3, the recoveries (95.00-104.00)%, the detection limit of the method 0.02g / 100mL. Conclusion The method is simple, rapid, accurate, sensitive and precise. It is suitable for the rapid determination of protein in milk and dairy products.
