松茸,我国叫松口蘑,属担子菌纲,伞菌目,白(口)蘑科,口蘑属,学名Tricholoma matsutake。松茸在日本是一种极畅销的珍贵食品,被推崇为“食菌之王”。价格昂贵,零售价每公斤高达13万日元(合人民币约900元)。松茸如此昂贵的原因:一是产量逐年下降,供不应求,需要从国外进口;二是它含有丰富的蛋白质、多种维生素和矿物质,特別是多糖的含量很高,具有一定的抗癌作用;三是不受环境污染。日本研究松茸早在十九世纪初就开始了,但到目前为止,人工栽培松茸还未获得成功。在我国,关于松茸的研究还刚刚开始。笔者试就我省松茸的生态环境和温度、降水与松茸产量之间的关系,进行以下初步探讨。
