目的对产自福建省的坛紫菜的化学成分进行了分析。方法利用常规分析方法对坛紫菜的蛋白质、碳水化合物、粗脂肪、灰分、游离氨基酸、矿物质元素、叶绿素a和类胡萝卜素及藻胆蛋白进行测定。结果粗蛋白、碳水化合物、粗脂肪、灰分占藻体干重的比例分别为34.88%~37.21%、46.86%~49.27%、1.68%~2.09%、8.75%~9.92%;光合色素中叶绿素a、类胡萝卜素、藻红蛋白、藻蓝蛋白的含量分别为601~646、120~130、1289~1802、1255~1743 mg·(100g)-1。藻体中所含游离氨基酸以及K、Na、Mg、Fe、P、Zn等无机离子含量丰富,重金属离子如Cu、Cd、Cr含量很低。结论坛紫菜是一种典型的高蛋白、低脂肪、富含无机元素的保健食品。
Objective To analyze the chemical composition of seaweed from Fujian Province. Methods The protein, carbohydrate, crude fat, ash, free amino acids, mineral elements, chlorophyll a, carotenoids and phycobiliproteins of Porphyra yezoensis were determined by routine methods. Results The percentages of crude protein, carbohydrate, crude fat and ash were 34.88% -37.21%, 46.86% -49.27%, 1.68% -2.09% and 8.75% -9.92%, respectively. The contents of chlorophyll a, The contents of carotenoid, phycoerythrin and phycocyanin were 601 ~ 646,120 ~ 130,1289 ~ 1802,1255 ~ 1743 mg · (100g) -1, respectively. Free amino acids contained in algae and K, Na, Mg, Fe, P, Zn and other inorganic ions rich in content, heavy metal ions such as Cu, Cd, Cr content is very low. Conclusion seaweed is a typical high protein, low fat, rich in inorganic elements of health food.
