本文通过对我国若干绿茶样品儿茶素含量及其组成的研究,证明儿茶素的组成及其比例关系对品质的影响很大。从较大量的分析数据中寻求出,没食子酸酯类儿茶素和L-表没食子儿茶素的含量,在一定程度上存在着相互消长的比例关系,从而导出了“儿茶素品质指数”的经验公式,指数的大小与绿茶的级别之间成为Y=aX~b的指数曲线关系。
