在有机相双溶剂体系中,用南极假丝酵母脂肪酶B(Novozym 435)催化合成阿魏酸油醇酯,研究了溶剂(logP)、底物分子比、分子筛加量、酶的用量以及反应温度等因素对反应的影响。结果表明溶剂亲脂性越强,底物转化率越高,最适的溶剂为异辛烷/丁酮,最适反应条件为:酸醇比为1:8(n/n),分子筛和酶加量分别为100mg和30mg/mL,反应温度为65℃,反应8d底物转化率最高可达99%。产物阿魏酸油醇酯具有一定抗DPPH自由基的能力,20μmol/L阿魏酸酯的DPPH自由基清除率为34%。
