高大平房仓储粮微生物及粮食品质变化初探

本文通过定点取样,对高大平房仓中粮食的各项品质指标进行了测定,并且初步研究了深层粮仓中微生物的变化规律,对微生物的指标与粮食的一般品质指标进行了相关性分析。结果表明:带菌量与粮食水分、脂肪酸值、降落值有一定的相关性,其中与水分的相关性比较强,而与发芽率、发芽势、还原糖的相关性不明显。 In this paper, the quality indicators of grain in high-storey warehouse were determined by fixed-point sampling. The variation rules of micro-organisms in deep silo were preliminarily studied, and the correlation between the indicators of micro-organisms and the general quality of food was analyzed. The results showed that there was a certain correlation between the amount of inoculum and the water content, fatty acid value and the falling value of the grain, especially the correlation with the water content, but not with the germination rate, germination potential and reducing sugar.
