目的了解山西省太谷县学校食堂的卫生状况,以便发现存在的问题,加强对学校食堂卫生管理,保障师生身体健康。方法2008年4—5月,对该县35所中小学和大中专技校的42个学校食堂进行了专项检查。结果42个食堂卫生许可证持证率为97.62%,加工间布局不合理的占21.42%;无专用洗刷、消毒、保洁设施的占40.48%;生熟食品容器、加工用具存在交叉污染的占28.57%;378名食堂从业人员健康证持证率为91.27%。结论太谷县学校食堂存在食品卫生安全隐患,应加强监督管理。
Objective To understand the health status of school canteens in Taigu County, Shanxi Province in order to find out the existing problems, strengthen the hygiene management of school canteens and ensure the health of teachers and students. Methods From April to May 2008, 42 school canteens in 35 primary and secondary schools and technical secondary schools in the county were inspected in a special way. Results The 42 health food permit certificates were 97.62% and the unprocessed ones were 21.42%. No special scrubbing, disinfection and cleaning facilities accounted for 40.48%. There were 28.57 cross-contamination of raw and cooked food containers and processing tools %; 378 canteens practitioners health certificate rate was 91.27%. Conclusion Taigu school canteens have food hygiene and safety hazards, supervision and management should be strengthened.
