目的为了解南京市栖霞区食品卫生餐具消毒质量,切断食源性疾病的发生和传播,保障消费者的身体健康,为进一步规范栖霞区餐饮业的卫生监督管理提供科学依据。方法对2005—2008年栖霞区653家饮食业餐具连续4年的检测结果进行分析。按GB14934-94《食(饮)具消毒卫生标准》中的方法进行。结果4年的餐具大肠菌群指标合格率在62.3~75.2%之间,4年间合格率差异有统计学意义(χ2=330.25,P<0.01)。不同种类餐具大肠菌群指标合格率在68.9%~91.5%之间,差异有统计学意义(χ2=365.38,P<0.01)。结论该区餐饮业餐具消毒合格率偏低,应加强这方面的管理,确保人民的饮食卫生。
Objective To understand the quality of disinfection of food hygiene tableware in Qixia District of Nanjing, cut off the occurrence and spread of foodborne diseases and protect the health of consumers, so as to provide scientific basis for further regulating the hygiene supervision and management of the catering industry in Qixia District. Methods The test results of 653 catering tableware in Qixia District for four consecutive years from 2005 to 2008 were analyzed. According to GB14934-94 “food (drinking) with disinfection health standards” in the method. Results The pass rate of four-year tableware coliform bacteria ranged from 62.3% to 75.2%. There was a significant difference in passing rate between the four years (χ2 = 330.25, P <0.01). The results showed that the passing rates of coliform bacteria in different types of tableware ranged from 68.9% to 91.5%, with significant difference (χ2 = 365.38, P <0.01). Conclusion The qualified rate of tableware disinfection in this area is relatively low. Management in this area should be strengthened to ensure people’s food hygiene.
