麻辣脆鲜的灯影牛肉

灯影牛肉,是四川省达州市的汉族传统名食。牛肉片薄如纸,色红亮,味麻辣鲜脆,细嚼之,回味无穷。相传,此菜是由唐代著名诗人元稹命名的。当年元稹在通州(今四川达州市一带)任司马。一天,他到一家酒肆小酌。下酒菜中有一种牛肉片,片薄肉香,呈半透明状,用筷子挟起来,在灯光下,红色牛肉片上丝丝纹理会在墙壁上反映出清晰的红色影像来,元稹当即唤之为“灯影牛肉”。另有传说称,8 0多年前,重庆梁平县一刘姓艺人来达州以做腌卤牛肉谋生,但生意萧条, Light beef, is a traditional Han nationality in Dazhou, Sichuan Province.
