一、温差刺激法 在平菇子实体形成阶段,每天给予7℃～12℃的温差刺激,可促使出菇提早,子实体发育整齐。方法是;白天盖膜保温,晴天早晨或傍晚揭膜露床,通风降温,加大温差,并结合高湿浇水诱导出菇。 二、高温刺激法 先将菌床(或菌袋)敞开干燥1～2天,然后连续进行重喷水,使菌面上有大量的积水存在,让菌床(或菌块)慢慢吸收,每天喷水2～3次,连续3天。在此期间,一般可敞膜通风。菌床表层培养基含水量以手握有水滴下时为宜,最后用棉布吸干料面积水,盖上地膜保温,几天后便可现蕾。采取高湿刺激法要具备两个条件:一是菌丝体必须吃透整个培养基,而且必须达到生理成熟,主要标志为吐黄水、结菌膜、菌丝体略呈黄褐色,甚至出现单个菇蕾;二是培养基结块要好,不能过于松散。
