三鲜豆皮,又称老通城豆皮。是湖北民间的一种传统小吃,早在唐代湖北就有绿豆皮问世,它是一种传统的乡土风味名食。过去,每到冬季农闲时节,广大农村都有烫制豆皮的食俗。后逐渐从农村进入城市,发展成为市售经营食品。“老通城”豆皮因配有鲜肉、鲜蛋、鲜虾仁作馅,故以“三鲜豆皮”得名。后又以猪心、猪肚、冬菇、兰片、叉烧肉等制馅,很快形成一种独特风味,而名噪武汉三镇。1958年毛泽东主席视察武汉时,曾品尝并赞美过三鲜豆皮,从此,更加名声大振。
