桃果实采后成熟过程中脂氧合酶活性变化

以‘玉露’和‘仓方早生’桃果实为试材,测定了成熟衰老过程中脂氧合酶(LOX)活性的变化。结果表明,采后玉露桃果实在20℃下贮藏,后熟软化进程很快,采后1~5d,硬度由(14.93±1.00)kg/cm2降至(5.11±0.85)kg/cm2,随后变化平缓,表现为采后初期硬度快速下降期和后期缓慢下降期两个阶段,但仓方早生桃果实的软化类型不同于玉露;两品种果实均具有典型的乙烯跃变过程,LOX活性峰先于乙烯释放峰出现2~3d。5℃低温贮藏可显著抑制LOX活性及乙烯的生成,有效地减缓软化;经低温贮藏16d后的玉露桃果实,置于20℃仍能正常后熟软化,且不影响其品质。 The changes of the activity of lipoxygenase (LOX) during the process of mature senescence were determined by using the peach fruits of ’Yulu’ and ’Ku Fangsheng Sheng’. The results showed that the postharvest jade peach fruits stored at 20 ℃, the ripening and softening process was fast, and the hardness decreased from (14.93 ± 1.00) kg / cm2 to (5.11 ± 0.85 ) Kg / cm2, followed by a gradual change in the early post-harvest hardness of the rapid decline and slow decline of the latter two stages, but Cangfang early peach fruit softening type is different from the Yulu; two varieties of fruit have a typical ethylene jump LOX activity peak appeared 2 ~ 3d before ethylene release peak. Storage at 5 ℃ could significantly inhibit LOX activity and ethylene production, and effectively soften. After stored at low temperature for 16 days, the fruits of Jade peach exposed to 20 ℃ could still be normalized and softened without affecting its quality.
