Nitroso compounds can be synthesized from nitrites and secondary amines in the stomach under suitable conditions. Nitrates can be converted to nitrites by microorganisms. Nitrates and nitrites can be found in many vegetables and cereals; NaNO_2 is also used as a coloring agent for meat products and eggs. Many secondary products can be measured in seafood. In the past some in vivo and in vitro synthesis of nitroso compounds are used pure compounds; this article is to use vegetable, vegetable juice and seafood to prove in vivo and in vitro synthesis of dimethylnitrosamine (DMNA).
