目的了解石门县餐饮单位食(饮)具的卫生状况,为预防各类食源性疾病和食物中毒提供依据。方法对2006-2008年石门县各类餐饮单位的食(饮)消毒效果资料进行分析。结果2006-2008年共检测各类餐饮单位食(饮)具28516份,合格24376份,总合格率为85.5%。各年的合格率分别为82%、85%、89%。差异有统计学意义(P<0.01)。第一季度合格率最高,为90%。第三季度合格率最低,为81%。不同季度合格率比较,差异有统计学意义(P<0.01)。筷子和杯类合格率最高,为89%。盘类最低,为80%。不同样品的合格率比较,差异有统计学意义(P<0.01)。大型餐饮单位食(饮)具消毒合格率明显好于中小型餐饮单位,差异有统计学意义(P<0.01)。结论石门县餐饮单位食(饮)具消毒质量整体水平较高,应继续加大监督力度,全面落实消毒和卫生管理制度。
Objective To understand the hygienic status of food (drink) in Shimen County catering units and provide basis for prevention of various foodborne diseases and food poisoning. Methods The food (drinking) disinfection effect data of various catering units in Shimen County from 2006 to 2008 were analyzed. Results In 2006-2008, a total of 28,516 food (drink) items were tested in all kinds of catering establishments, with a total of 24376 passes, with a total pass rate of 85.5%. The passing rates of each year are 82%, 85% and 89% respectively. The difference was statistically significant (P <0.01). The highest pass rate in the first quarter was 90%. The lowest pass rate in the third quarter was 81%. Different quarters pass rate, the difference was statistically significant (P <0.01). The highest pass rate of chopsticks and cups is 89%. The lowest category, 80%. Different samples of pass rate comparison, the difference was statistically significant (P <0.01). The rate of pass on food (drink) disinfection of large catering units was significantly better than that of medium and small catering units, the difference was statistically significant (P <0.01). Conclusion The overall level of food (drink) sterilizing quality in catering units of Shimen County is relatively high. We should continue to intensify supervision and fully implement the disinfection and sanitation management system.
