目的摸清鄂州市市售七大类食品中重金属污染状况,保障全市人民饮食安全,建立健全食品安全网络,有效进行风险评估。方法按照鄂州市制定的食品监测方案,合理布点,在鄂州市鄂城区、华容区、梁子湖区的流通环节和餐饮环节随机抽取具有代表性的七类食品样品进行监测,监测结果使用统计软件进行分析。结果 2012年、2013年和2014年七大类食品的总合格率分别为97.0%、98.4%和98.4%,不同年份合格率差异无统计学意义(P>0.05)。水果、水产动物、蔬菜、乳制品、禽畜肉、粮食和特殊营养食品七大类食品的合格率分别为94.4%、97.5%、97.6%、100%、99.1%、98.0%和100%,不同食品类别样品合格率差异有统计学意义(P<0.05)。七大类食品铅、镉、总汞、总砷的合格率分别为99.3%、98.9%、99.9%和100%,不同监测参数合格率差异无统计学意义(P>0.05)。结论鄂州市近三年的市售七大类食品铅、镉、汞、砷合格率较高,监测结果与周边地市比较差异性较小。
Objective To find out the status of heavy metal pollution in the seven categories of foodstuffs sold in Ezhou city, ensure the food safety of the people in the city, establish and improve the food safety network and conduct effective risk assessment. Methods According to the food monitoring plan formulated by Ezhou, a reasonable distribution of foodstuffs was carried out. Seven representative food samples were randomly selected from the circulation and catering sectors of Echeng District, Huarong District and Liangzihu District of Ezhou City for monitoring. The monitoring results were analyzed using statistical software . Results The total qualified rates of seven categories of food in 2012, 2013 and 2014 were 97.0%, 98.4% and 98.4%, respectively. There was no significant difference in passing rate in different years (P> 0.05). The pass rates of fruits, aquatic animals, vegetables, dairy products, livestock meat, foodstuffs and special nutritious foods were 94.4%, 97.5%, 97.6%, 100%, 99.1%, 98.0% and 100%, respectively There was a significant difference in passing rate of food samples (P <0.05). The pass rates of lead, cadmium, total mercury and total arsenic in the seven categories of foodstuffs were 99.3%, 98.9%, 99.9% and 100% respectively. There was no significant difference in the passing rate of different monitoring parameters (P> 0.05). Conclusion The qualified rate of lead, cadmium, mercury and arsenic in the seven categories of foodstuffs sold in the past three years in Ezhou City is relatively high. The difference between the monitoring results and the surrounding areas is relatively small.
