目的了解萧山区餐饮行业餐(饮)具的消毒效果及影响因素,为规范餐饮具消毒管理提供科学依据。方法采用大肠菌群快速纸片法,对杭州市某区餐饮业餐饮具消毒状况进行调查。结果连续3年从该区部分餐饮行业共检测餐饮具8 593件,平均合格率为88.3%。2011-2013年度合格率依次为89.4%、86.5%和88.8%。各种餐饮具中,以碗卫生合格率最低。结论杭州市萧山区餐饮行业餐饮具卫生状况较好,需要加大中小型餐饮企业餐(饮)具消毒的监管力度。
Objective To understand the disinfection effect and influencing factors of meal (drink) in Xiaoshan District catering industry and provide a scientific basis for regulating the disinfection management of tableware. Methods Coliform bacteria fast paper method was used to investigate the disinfection status of catering equipment in a certain area of Hangzhou. Results A total of 8 593 tableware items were detected from some catering industries in the area for three consecutive years with an average pass rate of 88.3%. The pass rates in 2011-2013 were 89.4%, 86.5% and 88.8% respectively. A variety of tableware, bowl health pass rate is the lowest. Conclusion Xiaoshan District, Hangzhou, catering industry health status is good, you need to increase small and medium-sized catering business catering (disinfection) with the supervision.
