目的掌握韶关市区食品污染物状况及危害程度,为该地区控制食品污染制定控制措施,保障食品安全和市民的健康提供科学依据。方法选择韶关市区主要集贸市场,随机抽取18类23个品种599份食品样品,分别进行镉、铅、氟、二氧化硫、胭脂红、日落黄、柠檬黄、苯甲酸、山梨酸、安赛蜜、糖精钠、农药残留监测。以5类食品,11个品种,156份样品进行沙门菌、肠出血性大肠杆菌、单核细胞增生性李斯特菌、副溶血性弧菌等食源性致病菌的监测。结果蔬菜中甲胺磷农药残留检出率6.07%,敌敌畏农药检出率8.41%,镉的超标率14.7%,铅的超标率20.6%,二氧化硫的超标率4.4%;茶叶中氟的含量较高,平均值106.1mg/kg。所检测的食品添加剂除二氧化硫外,合格率100%。海水产品中副溶血性弧菌的检出率20.0%,沙门菌的检出率5.0%。结论韶关市区的部分食品受到镉、铅、氟、农药残留、食源性致病菌的污染,存在食品安全的风险。
Objective To grasp the status of food contaminants in Shaoguan City and its harmfulness, and to provide a scientific basis for controlling pollution in the area, establishing control measures and safeguarding food safety and public health. Methods A total of 599 food samples from 18 varieties and 23 varieties were selected from the main markets of Shaoguan City. Salmonella, enterohemorrhagic Escherichia coli, Listeria monocytogenes, Vibrio parahaemolyticus and other food-borne pathogens were monitored in 5 types of food, 11 varieties and 156 samples. Results The detection rates of methamidophos pesticide residues in vegetables were 6.07%, 8.41% for dichlorvos pesticides, 14.7% for cadmium, 20.6% for lead and 4.4% for sulfur dioxide. The content of fluoride in tea was higher With an average of 106.1 mg / kg. The detected food additives in addition to sulfur dioxide, the pass rate of 100%. The detection rate of Vibrio parahaemolyticus in seawater products was 20.0%, and the detection rate of Salmonella was 5.0%. Conclusion Some foods in Shaoguan City are contaminated with cadmium, lead, fluoride, pesticide residues and food-borne pathogens, posing a risk of food safety.
