本文根据职业院校烹饪专业的教学目标和《面点制作技术》课程的特点,分析了“讲、演、练、评”一体化教学模式在本课程中的具体运用。“讲、演、练、评”一体化教学模式把教学目标、教学过程、教学内容、教学方法及教学评价几个要素充分集合在了一起,它的运用为职业院校烹饪专业培养高技能型人才提供了有利的科学依据,具有很强的实用价值。
