芥菜原产我国,有四个变种。在栽培上分叶用、茎用、根用和苔用四类。既可鲜食又可加工。由于蛋白质含量较高,腌制加工品营养丰富,味美脆嫩。著名的有涪陵和重庆的榨莱,南充冬菜,宜宾芽菜和内江大头菜。尤其是茎用芥菜加工的四川榨菜,由于食用多样,颇堪贮藏,成为解决蔬菜淡季特产之一。全国各地都相继引种试种,其中浙、湘、鄂、桂、皖、赣、豫、鲁诸省区皆已成功,并积极大力发展。当前茎用芥菜生产受病毒病(习称缩叶病)的威胁很大,特别是城市近郊,毒源作物面广,情况更为严重,轻者减产20—30%,重者毁种无
