[目的]了解大连市食(饮)具消毒状况,为进一步规范饮食单位卫生监督管理提供科学依据。[方法]2011年6~9月,采用大肠菌群快速检测纸片法对大连市区223家餐饮单位消毒后备用的食(饮)具进行检测。[结果]调查223家餐饮单位,合格的177家,合格率为79.37%;检测食(饮)具3 051份,合格2 593份,合格率为84.99%。食(饮)具消毒合格率,学校食堂为91.67%,社会餐饮单位为84.29%(P<0.01);集中消毒的为90.09%,自行消毒的为73.57%(P<0.01)。各类食(饮)具消毒合格率,盘子为82.96%、小碗为88.92%、杯子为79.97%、汤匙为90.00%、筷子为93.65%。[结论]大连市食(饮)具总体消毒合格率较低。
[Objective] To understand the status of food (drink) disinfection in Dalian and provide scientific basis for further regulating the hygiene supervision and management of catering units. [Methods] From June to September of 2011, the food (drink) prepared by post-disinfection of 223 catering units in Dalian urban area was detected by the method of rapid detection of coliform bacteria. [Results] The investigation of 223 catering units, qualified 177, with a pass rate of 79.37%; detected food (drink) with 3 051 copies, qualified 2 593 copies, the passing rate of 84.99%. Food (drinking) with a pass rate of disinfection, school canteens was 91.67%, social catering units was 84.29% (P <0.01); centralized disinfection was 90.09%, self-disinfection was 73.57% (P <0.01). Various types of food (drinking) with disinfection pass rate of 82.96% plate, a small bowl of 88.92%, a cup of 79.97%, 90.00% spoon, chopsticks 93.65%. [Conclusion] Dalian food (drinking) with a lower overall disinfection pass rate.
