两年前游长江三峡时,在重庆吃了一顿自助餐,其中的菜大部分是辣的。一位在1950年代就移居重庆的老人告诉我们说:“当年我从上海迁来的,也是不吃辣的,但后来就习惯了, 重庆地区多雨潮湿,容易生关节炎, 辣椒有御寒作用,有了吃辣习惯,就不会生关节炎了。”还有一次游贵州时,发现那里的菜肴辣得令人不敢下著,后来才知道,贵州多瘴气,而辣是抵御瘴气的, 逼得人们不得不吃辣。这说明气候因素是决定饮食文化的。
