以鲜活鲢为研究对象 ,从肌肉组织冷冻切片、盐溶蛋白、Ca2 + ATP酶活性等角度研究在缓慢冻结条件下鲢的冷冻变性情况 ,并探讨鲢冷冻变性的机理。结果表明 :冻结前后 ,鲢肌肉纤维组织结构变化十分显著 ;鲢冻结至 - 35℃后盐溶蛋白下降了 14.8% ;Ca2 + ATP酶活性变化则不明显。
Fresh silver carp was used as research object to investigate the freezing degeneration of silver carp under slow freezing conditions from the aspects of frozen section of muscle tissue, salt-soluble protein and Ca2 + -ATPase activity, and to explore the mechanism of silver carp freezing degeneration. The results showed that the structure of the silver and silver carp muscle tissue changed significantly before and after freezing. The salin content decreased by 14.8% after frozen to -35 ℃, and the Ca2 + -ATPase activity did not change obviously.
