利用GMP的丙醇———双缩脲改良测定法 ,对我国冬麦区 12 4份有代表性的冬小麦品种和品系的谷蛋白聚合体进行了测定 ,系统探讨了谷蛋白聚合体与和面仪参数的关系。结果表明 :(1)我国小麦品种面粉谷蛋白大聚合体 (GMP)含量的分布范围在 1 70 %~ 6 6 0 %之间 ,平均含量为 3 87% ;GMP在面粉蛋白质中所占的比例 (GMP Pr)平均为 31 2 1% ;面粉可溶性谷蛋白 (SGP)含量平均为 1 75 % ,占面粉蛋白质的 14 32 % ;面粉GMP含量和GMP在总蛋白质中所占的比例以及SGP在总蛋白质中所占比例 (SGP Pr)的品种间变异均较大。 (2 )小麦面粉中谷蛋白大聚合体GMP含量和可溶性谷蛋白SGP含量对和面仪参数变异作用方向相反。GMP和GMP Pr含量对和面仪参数具有正向效应 ,而SGP和SGP Pr含量为负向效应。
Using GMP propanol - biuret modified assay, the glutenin aggregates of 12 4 representative winter wheat cultivars and lines in winter wheat were determined. The effects of glutenin aggregates and Instrument parameters of the relationship. The results showed that: (1) The distribution range of wheat gluten macromolecule (GMP) content in China was between 170% and 660%, and the average content was 3 87%. The proportion of GMP in flour protein (GMP Pr) averaged 31 2 1%. The average content of flour soluble glutenin (SGP) was 1 75%, accounting for 14 32% of the flour protein. The content of GMP in flour and the proportion of GMP in total protein, The percentage of proteins (SGP Pr) varied greatly among cultivars. (2) GMP content and soluble glutenin (SGP) content of wheat gluten macropolymer aggregates have the opposite direction to the parameters variation of the surface analyzer. The GMP and GMP Pr contents have a positive effect on the surface analyzer parameters, while the SGP and SGP Pr contents have a negative effect.
