1997至2005年间,世界猪肉消费量提高了27%,2005年的猪肉消费量超过9300万t。在世界范围内,猪肉是首选肉类。猪肉是中国人民的主要肉食品,据国家统计局提供的资料,2006年我国城镇居民猪肉人均购买量为每月1.646kg,占肉禽类消费比重为55.69%。从各省份来看,广西城镇居民每月人均猪肉购买量达到2.70kg,居全国之首;其次是广东省,为2.45kg。从2003年下半年开始,养猪持续两年的高效益使生猪产业蓬勃发展,2004、2005年上半年,养猪户补栏种猪积极,母猪存栏比重上升至较高水平,生猪出栏呈释放式增长,供应充足。2005年7月,四川省生猪链球菌的蔓延,致使供求关系失衡。到2006年5月,全国猪肉市场已进入第四个波动大周期的波谷(低谷),收购价开始大幅下滑,养殖户大量屠杀母猪,存栏量大减,下降了20%左右。8月份价格恢复性上涨,价格开始理性回归,但供大于求的格局没有改变,涨幅平稳。进入2007年4月下旬,我国猪肉价格如股票一样如日中天,其中部分地区猪肉价格上涨至1997年以来的高点。
