大豆是一种重要的食用作物,种子含有丰富的营养,特别含有比一般粮食作物更为丰富的植物性蛋白质。大豆种子蛋白质含量一般在40%左右,比牛、羊、猪肉蛋白质含量高一倍,是人类蛋白质食物的重要来源。同时,它还含有多种维生素和人体所需要的钙、磷、铁等矿物质营养成分。不仅如此,大豆种子还含有16—18%的脂肪,又是一种很好的油料作物。因此,发展大豆生产,增加大豆产量,对支援国家建设,保证市场供应,改善人民生活,搞好外贸,有十分重要的意义。
