应用高效液相色谱仪,初步研究了维生素C(Vc)稳定性的影响因素。以Waters Nova-Park C18柱 (3.9×150mm)为分析柱,磷酸二氢钾缓冲溶液(pH=3.0)为流动相,Waters2487紫外检测器检测。结果表 明Vc中性偏酸性条件下较稳定,对空气、光、热、氧化剂、蔗糖不稳定。
Using high performance liquid chromatography, preliminary study of the factors that affect the stability of vitamin C (Vc). A Waters Nova-Park C18 column (3.9 × 150 mm) was used as the analytical column, and potassium dihydrogen phosphate buffer solution (pH = 3.0) was used as the mobile phase. Waters 2487 UV detector was used for detection. The results showed that the neutral Vc under acidic conditions more stable, air, light, heat, oxidants, sucrose instability.
