Foreword Agriculture in the islands of the Caribbean has so far been based on the structure established by the slave-plantation system from the 16th to the 19th centuries. According to this system, African slaves worked hard and the Caribbean islands were unearthed (the land was obtained by Europeans from the conquered Native American Indians) while Europe provided speculative capital and operated it. Slave plantations economically produce agricultural products for export, especially sugar, which are then marketed in the European market. This
