食品中亚致死损伤细菌的存在不容忽视,因为受损的细胞能够在适宜的条件下修复,并且对选择性培养基敏感,容易造成假阴性检测结果,在食源性致病菌检测过程中需要将其考虑在内。然而,目前关于该领域的研究综述尚少。本文对食品中亚致死损伤细菌的形成、修复及检测方法等进行了综述。开展该领域的研究,对于食品安全控制技术和快速简便检测方法的开发具有重要的意义。
