[目的]了解榆林市2006~2008年餐饮单位食(饮)具消毒状况,为进行消费环节的食品安全整顿工作顺利开展提供科学依据。[方法]2006~2008年随机抽取榆林市198家餐饮单位进行调查,采集消毒后待用的食(饮)具进行检测。[结果]3年合计检测样品6 460份,合格率为82.20%。2006~2008年食(饮)具消毒合格率分别为71.25%、81.94%、91.31%,不同年份合格率差异有统计学意义(P<0.01)。碗、盘子、茶具、酒具、汤匙、筷子的合格率分别为87.89%、83.52%、81.30%、79.03%、79.95%、78.87%,差异有统计学意义(P<0.01)。大、中、小型单位合格率分别为94.48%、77.51%、70.29%,差异有统计学意义(P<0.01)。蒸汽消毒的食(饮)具合格率为87.60%,化学消毒的食(饮)具合格率为74.33%,差异有统计学意义(P<0.01)。[结论]榆林市食(饮)具合格率有待于进一步提高,不同食(饮)具、不同规模、不同消毒方式食(饮)具合格率存在差异,建议推广蒸汽消毒方式。
[Objective] To understand the situation of food (drink) disinfection in catering units in Yulin City from 2006 to 2008, which provided scientific basis for the smooth implementation of food safety rectification in consumption. [Method] A total of 198 food and beverage units in Yulin City were randomly selected from 2006 to 2008 for investigation, and the food to be used after disinfection was collected for testing. [Result] There were 6 460 samples tested in 3 years with a pass rate of 82.20%. The passing rate of food (drinking) with sterilization from 2006 to 2008 was 71.25%, 81.94% and 91.31%, respectively. There were significant differences in passing rate in different years (P <0.01). The pass rates of bowls, plates, tea sets, wine sets, spoons and chopsticks were 87.89%, 83.52%, 81.30%, 79.03%, 79.95% and 78.87%, respectively. The difference was statistically significant (P <0.01). The passing rates of large, medium and small units were 94.48%, 77.51% and 70.29%, respectively, with significant differences (P <0.01). The pass rate of steam-sterilized food and drink was 87.60%, and the pass rate of chemical and disinfection food and drink was 74.33%, the difference was statistically significant (P <0.01). [Conclusion] The passing rate of food (drink) in Yulin needs to be further improved. There are differences in the passing rate of food (drink) with different food (drink), different scale and different disinfection methods. It is recommended to promote the steam sterilization mode.
