目的了解北京市大兴区中央厨房食品添加剂使用现状,为规范食品添加剂在中央厨房中的使用提供依据。方法采用《中央厨房使用食品添加剂状况调查表》,对北京市大兴区所有中央厨房使用食品添加剂的情况进行全面调查。结果北京市大兴区中央厨房未使用非食用物质;个别中央厨房存在滥用食品添加剂现象;食品添加剂的使用存在外包装标签内容不完整,索证材料不全,登记、保管和使用不规范等问题。结论应加强食品添加剂相关法律法规、国家使用标准的宣传力度,对中央厨房的食品添加剂必须实行严格的备案制度,确保其使用安全。
Objective To understand the current status of central kitchen food additives in Daxing District, Beijing, and provide the basis for regulating the use of food additives in the central kitchen. Methods A “Questionnaire on the Use of Food Additives in Central Kitchen” was adopted to conduct a comprehensive investigation on the use of food additives in all central kitchens in Daxing District, Beijing. Results The central kitchen of Daxing District in Beijing did not use non-food substances; the abuse of food additives occurred in some central kitchens; the use of food additives contained incomplete labeling materials, incomplete certification materials, registration, storage and use of non-standard materials. Conclusions The publicity of laws and regulations related to food additives and national standards of use should be strengthened. A strict filing system must be put in place for food additives in central kitchen to ensure their safe use.
