通过对不同种类的肉及肉制品中磷酸盐的分析研究,对钼蓝分光光度法测定食品中复合磷酸盐进行改进。方法采用钼蓝比色法与GB/T5009.87—2003钼蓝分光光度法测定食品中复合磷酸盐的方法进行比对。改进后,其标准系列线性良好,相关系数r=0.9998,回归方程C=0.02124A-0.004333,该法简化了操作过程,显色明显,得到了较好的精密度和准确度。
Through the analysis of phosphate in different kinds of meat and meat products, the determination of complex phosphate in food by molybdenum blue spectrophotometry was improved. Methods The molybdenum blue colorimetric method and GB / T5009.87-2003 molybdenum blue spectrophotometric method for the determination of complex phosphate in food were compared. After the improvement, the standard series has a good linearity, the correlation coefficient r = 0.9998, the regression equation C = 0.02124A-0.004333, this method simplifies the operation process, obvious color, get better precision and accuracy.
