目的了解日照市饮食行业食具的卫生状况。方法对市区内酒家、饭店、餐厅、大排档、个体摊档和乡镇级酒家、饭店(档)进行食具卫生监测。结果 2009~2011年3年来市区和乡镇共采样监测的食具11066份,合格7567份,平均合格率为68.38%。乡镇级饮食行业食具采样检测3019份,合格1699份,合格率为56.28%,市区采样检测8047份,合格5868份,合格率72.92%,乡镇级饮食行业食具消毒合格率明显低于市区。不同类型饮食行业食具卫生合格率相比较,个体摊档共采样检测612份,合格289份,合格率为47.22%,酒家采样5810份,合格4607份,合格率79.29%,饭店、餐厅大排档采样4644份,合格2671份,合格率为57.52%,结论酒家、小吃店、快餐店的餐具消毒效果明显不同,汤匙和筷子对消费者的健康威胁最大。乡镇级饮食行业食具消毒合格率明显低于市区。
Objective To understand the health status of food utensils in Rizhao City. Township-level eating utensils disinfection qualified rate was significantly lower than urban areas.
