梅花鹿胎盘多肽具有丰富的营养价值,抗氧化性能好。以酶解获得的梅花鹿胎盘多肽为原料,进行辐照杀菌处理,比较不同剂量处理后梅花鹿胎盘多肽的杀菌效果。结果表明:在辐照剂量为7 kGy时,梅花鹿胎盘多肽中细菌总数为45 cfu/mL,大肠杆菌MPN(最大可能数)<3。该剂量辐照后的样品,羟基自由基的清除率降低了4.8%,超氧自由基的清除率降低了12.3%,DPPH自由基的清除率降低了20.6%。这说明,利用7 kGy辐照剂量杀菌后的梅花鹿胎盘多肽,既达到了商业无菌的标准,又有效地保持了产品的生物活性。
Sika deer placental peptide has rich nutritional value, good anti-oxidation properties. The deer placenta polypeptide obtained by enzymolysis was used as raw material for irradiation sterilization treatment, and the bactericidal effect of the sika deer placenta polypeptide after different doses of treatment was compared. The results showed that the total number of bacteria in the sika placenta polypeptide was 45 cfu / mL at irradiation dose of 7 kGy, and the MPN of E. coli was <3. At this dose, the radical scavenging rate decreased by 4.8%, the superoxide radical scavenging rate decreased by 12.3% and the DPPH radical scavenging rate decreased by 20.6%. This shows that the use of 7 kGy irradiated dose of sika deer placental polypeptide, both to achieve a commercial sterile standards, but also effectively maintain the biological activity of the product.
