目的:对北戴河暑期主要食品进行食品安全风险监测,及时发现安全隐患。方法:对北戴河区内的宾馆、集贸市场、饭店、超市、熟食店、路边小吃摊点等经营场所,经营的熟肉制品、乳制品、水发水产品及鲜水产品、生活饮用水、凉拌菜、蔬菜、水果七类食品,检测主要影响指标。结果:总合格率纯净水、蔬菜和水果均为100%;水发水产品及鲜水产品为87.50%(35/40);熟肉制品为80.00%(32/40);乳制品为85.0%(34/40);凉拌菜为理化检测为100%,微生物检测为55.0%(22/40)。结论:纯净水、蔬菜和水果全部合格,熟肉制品、乳制品和水发水产品及鲜水产品食品安全整体较好,但也存在不同程度的安全隐患,有待加强管理和提高。
Objective: To monitor the food safety risks of Beidaihe summer main food and find out the potential safety hazard in time. Methods: The Beidaihe district hotels, markets, restaurants, supermarkets, delicatessens, roadside stalls and other business premises, the operation of cooked meat products, dairy products, water and aquatic products and fresh water products, drinking water, cold Vegetables, fruits and seven kinds of food, testing the main impact indicators. Results: The total qualified rate of pure water was 100% for vegetables and fruits, 87.50% (35/40) for aquatic and freshwater products, 80.00% (32/40) for cooked meats and 85.0% for dairy products 34/40); salad dressing physical and chemical testing was 100%, microbial test was 55.0% (22/40). Conclusion: The pure water, vegetables and fruits are all qualified. The cooked foods, dairy products, aquatic products and fresh food products are generally good in food safety, but there are also some potential safety problems to be strengthened and improved.
