熟肉制品经过一定时间的贮存,由于污染和环境温度的影响,便会发生腐败。我国目前有大量的个体熟肉加工点,卫生条件很差,大多数缺乏冻藏设备。因此,了解和确定熟肉制品在一定环境温度下的货架寿命或贮存时间,对于严格执行食品卫生法,保护人民群众的身体健康,具有非常重要的实际意义。
After a certain period of storage of cooked meat products, corruption will occur due to pollution and environmental temperature. At present, there are a large number of individual cooked meat processing sites in our country, with poor sanitation conditions and most of them lacking frozen storage facilities. Therefore, to understand and determine the shelf life or storage time of cooked meat products under certain ambient temperature has very important practical significance for strict implementation of the Food Sanitation Law and the protection of people’s health.
