目的了解石嘴山市某区不同类型餐厅餐饮具消毒质量状况,为加强餐饮具消毒管理提供参考。方法采用大肠菌群快速检验纸片方法,对该区990家大中型餐厅的餐饮具消毒质量进行检测。结果共检测餐饮具9 325份,消毒质量平均总合格率为81.05%。大型餐厅的餐饮具消毒效果合格率为92.02%,中型餐厅的餐饮具消毒效果合格率分别为73.97%。餐厅食品处理区消毒效果合格率为85.02%。结论石嘴山市某区大型餐厅餐饮具消毒效果较好,中型餐厅消毒卫生状况有待改善,应加强监管力度。
Objective To understand the disinfection quality of different types of dining utensils in a certain area of Shizuishan, so as to provide references for strengthening the disinfection management of tableware. Methods The method of rapid test of coliform bacteria was used to test the disinfection quality of 990 large and medium-sized restaurants in this area. Results A total of 9 325 tableware were tested, with an average total pass rate of 81.05%. Large restaurant dining tableware disinfection pass rate of 92.02%, medium-sized restaurant dining tableware disinfection pass rates were 73.97%. Disinfection of food processing area restaurant passing rate was 85.02%. Conclusion Shizuishan City, a large-scale restaurant dining tableware disinfection better disinfection health status of medium-sized restaurant to be improved, should strengthen supervision.
