目的了解番禺区水产品及水发产品中甲醛的含量。方法随机从番禺区的水产批发市场、零售市场和餐饮单位采集各类水产品及水发产品样品,采用乙酰丙酮比色法进行检测。结果73份水产品中,10~100mg/kg的样品有12份,占16.4%;100mg/kg以上的样品有3份,占4.1%。九肚鱼和白饭鱼的甲醛平均值较高,最高值达301mg/kg;各类水发产品甲醛平均值均超过为100mg/kg,最高值达344.9mg/kg。水产品浸泡水甲醛平均含量为45.1mg/kg,其中白饭鱼浸泡水甲醛平均含量为67.2mg/kg。水发产品浸泡水甲醛平均含量为108.9mg/kg,其中牛柏叶浸泡水平均甲醛含量为124.6mg/kg。结论番禺区市售水产品和水发产品均存在添加甲醛的情况,尤其是水发产品违法添加甲醛较为突出,建议继续加强对水发产品甲醛含量监测,加大监管力度。加强对水产品甲醛本底含量的研究,制定相关标准,为落实水产品安全管理提供依据。
Objective To understand the content of formaldehyde in aquatic products and water products in Panyu District. Methods Samples of various types of aquatic products and aquatic products were randomly collected from the aquatic wholesale markets, retail markets and catering units in Panyu District. The samples were detected by acetylacetone colorimetric method. Results Of the 73 aquatic products, 12 samples (10% ~ 100mg / kg) accounted for 16.4%, 3 samples (100%) or more, accounting for 4.1%. Formaldehyde and white rice fish, the higher the average value of formaldehyde, the highest value of 301mg / kg; all kinds of hair products formaldehyde average exceeded 100mg / kg, the highest value of 344.9mg / kg. The average content of formaldehyde in soaking water of aquatic products was 45.1 mg / kg, of which the average content of formaldehyde in soaked rice water was 67.2 mg / kg. The average content of formaldehyde in the soaked water of water products was 108.9mg / kg, of which the formaldehyde content in the soaked leaves of Arabidopsis was 124.6mg / kg. Conclusions There is a situation of adding formaldehyde in the aquatic products and water products in Panyu District. In particular, formaldehyde is more and more noticed in the water-based products. It is suggested that the monitoring of formaldehyde content in water-based products should be strengthened and the supervision should be strengthened. Strengthen the research on the background content of formaldehyde in aquatic products, formulate relevant standards and provide basis for the implementation of safety management of aquatic products.
