目的本研究是为确保沈阳全运会食品安全,对部分食品提取样本进行检验。方法采用ICP-MS方法对食物样本进行重金属测定,采用微菌落法对食品样本所含的细菌类进行测定。结果所测定的运动员食品中铜、砷、镉、铅的含量均小于《中华人民共和国食品卫生标准》,置信度>60%,差异没有统计学意义(P<0.05),符合食品安全要求。运动员食品中的细菌含量大大小于《中华人民共和国食品卫生标准》中的细菌标准,运动员可以放心食用。结论采用ICP-MS和微菌落法等有效的检验方法,是检验全运会食品重金属含量和有害细菌含量的有效手段,可以很大限度地确保运动员的食品安全,但无法监测非金属有害物质,有一定的局限性。
Objective This study is to ensure the food safety of Shenyang National Games, part of the food samples were tested. Methods ICP-MS method was used to determine the heavy metals in food samples. Microbacteria method was used to determine the bacteria in food samples. Results The contents of copper, arsenic, cadmium and lead in athletes’ food were all less than “People’s Republic of China Food Hygienic Standard” with confidence> 60%. The difference was not statistically significant (P <0.05), which met the food safety requirements. Bacterial levels in athletes’ foods are significantly smaller than those in the “Food Hygiene Standards of the People’s Republic of China”, allowing athletes to eat with confidence. Conclusion The effective test method such as ICP-MS and micro-colony method is an effective measure to test the heavy metal content and harmful bacteria content of food in the National Games. It can greatly ensure the food safety of athletes, but can not monitor the non-metallic harmful substances, There are some limitations.
