枝豆在中国称毛豆,在成熟前采收供食用的一类大豆的总称。目前,日本国内的多数枝豆品种的株高45~75厘米之间,生育期较短,一般在100~120天,植株分枝力较强,着荚部位低,百粒重较大,在30克左右。枝豆种子的蛋白质含量较高,幼芽拱土力比较弱,在成后易烈荚,子粒吸水速度极快,遇水后,种子的芽率明显下降,所以,枝豆种子的繁殖难度较大。根据两年来的实践,初步掌握了该类品种的特征特性,如果采取适宜的栽培技术措施,加强种子田的田间管理,种子收获后注意防水,每亩获得100公斤以上的成品种子。
