研究3种贮藏温度(0、4、10℃)条件下经净化及气调保鲜的泥蚶,讨论泥蚶菌落总数及挥发性盐基氮值(T-VBN值)的变化,建立菌落总数和挥发性盐基氮值与贮藏时间和贮藏温度之间的动力学模型,以预测和控制贮藏过程中菌落总数和挥发性盐基氮的变化。试验结果表明,一级化学反应动力学模型和阿伦尼乌斯(Arrhe-nius)方程对微生物数量和挥发性盐基氮的变化有较高的拟合精度。菌落总数变化速率常数的阿伦尼乌斯方程回归系数为2.95×105,挥发性盐基氮变化速率常数的阿伦尼乌斯方程回归系数为3.695×106。
To study the changes of the total number of colonies and the volatile basic nitrogen (T-VBN) in the three kinds of storage temperature (0, 4, 10 ℃) Volatile basal nitrogen values and storage time and storage temperature kinetic model to predict and control the total number of colonies during storage and volatile changes of the base nitrogen. The experimental results show that the first-order chemical kinetic model and the Arrhe-nius equation have higher fitting accuracy for the change of the number of microbes and the volatile basic nitrogen. The regression coefficient of the Arrhenius equation for the rate constants of the total number of colonies was 2.95 × 10 5 and the Arrhenius equation for the rate constant of volatile base nitrogen was 3.695 × 10 6.
