黑玉米是指籽粒颜色相对较深(如紫、黑色等)的玉米,是优质的黑色食品来源之一.黑玉米的突出特点是蛋白质、脂肪和粗纤维的含量分别比黄玉米高30%、60%和40%左右;富含17种氨基酸,其中有14种高于黄玉米.氨基酸主要成份的谷氨酸.精氨酸、甘氨酸和丝氨酸总含量达8.5%,比黄玉米高1.2倍.矿物质营养元素锌锰铁铜的含量分别比黄玉高22%、38%、20%和52.3%.
Black corn is one of the sources of high-quality black food with relatively darker kernel color (purple, black, etc.). The prominent characteristic of black corn is that the contents of protein, fat and crude fiber are respectively 30% 60% and 40%, respectively, and 17 kinds of amino acids were rich, of which 14 kinds were higher than yellow maize.The content of glutamic acid, arginine, glycine and serine in amino acid was 8.5%, 1.2 times higher than yellow corn. The mineral nutrition elements of zinc, manganese, iron and copper were 22%, 38%, 20% and 52.3% higher than topaz.
