香菜、芹菜、菠菜均为耐寒性较强的蔬菜。因此,通过各种方式进行冬季贮藏,对调节市场淡季,提高经济效益都有重要意义。目前,东北地区贮藏这三种蔬菜主要方法有以下几种。菠菜、香菜的冻藏:在土壤结冻前,挖一窄而浅的沟(宽、深各约一锹左右)。在早晚地面上冻、中午化冻的气温条件下,将菠菜或香菜连根收获,摘除黄烂叶,就地捆成1~2斤的小把,直接入沟冻藏。蔬菜入沟后,上面先覆盖一薄层沙土,以后随着气温的下降,逐渐加厚覆土层,沈阳地区一般覆土总厚度为20~30厘米。可贮到翌年三、四月。冻藏的菠菜或香菜上市前2~3天取出,放在0~2℃的空屋或棚窖内解冻。然后摘除黄烂叶捆把上市。
