目的了解甘肃省甘南州食品中食源性致病菌的污染状况,为预防控制食源性疾病提供科学依据。方法2013年1—12月以无菌方式定期采集甘南州十大类市售食品369份样品,进行食源性致病菌检测。结果在十大类市售食品369份样品中,检出阳性20份,检出率为5.42%。;乳及乳制品中食源性致病菌的检出率最高,为24.24%;其次是婴幼儿配方食品,检出率16.36%,不同食品类别间食源性致病菌检出率差异有统计学意义(χ2=46.918,P<0.05);从超市采集的样本中食源性致病菌的检出率最高,为9.74%;散装样品中各类食源性致病菌的检出率7.66%,致病菌的检出率明显高于定型包装食品。结论甘南州市售食品中食源性致病菌污染较为严重,主要集中在小型餐馆、农贸市场、便利店和街头食品中熟肉制品和米粉、米线、凉皮类食品中,以金黄色葡萄球菌污染为主。
Objective To understand the status of food-borne pathogenic bacteria in Gannan food in Gansu Province and provide a scientific basis for the prevention and control of foodborne diseases. Methods From January to December in 2013, 369 samples of ten categories of commercial products in Gannan Prefecture were routinely collected by aseptic methods for the detection of foodborne pathogens. Results Among the 369 samples of ten kinds of commercially available foods, 20 were positive and the detection rate was 5.42%. ; Milk and dairy products in the highest detection rate of foodborne pathogens, was 24.24%; followed by infant formula, the detection rate of 16.36%, food-borne pathogens between different detection rates were (Χ2 = 46.918, P <0.05). The detection rate of food-borne pathogens in the samples collected from supermarkets was the highest (9.74%). The detection rate of various food-borne pathogens in bulk samples 7.66%, the detection rate of pathogenic bacteria was significantly higher than that of shaped packaged food. Conclusion The food-borne pathogenic bacteria in Gannan commercial food are more polluted, mainly in small restaurants, farmer’s markets, convenience stores and street food, cooked meats and rice noodles, rice noodles and cool skinned foods.
