《餐饮服务与管理》是中职酒店管理专业的一门核心职业能力课程,对学生的实操能力要求较高。但是,目前的普遍现实是餐饮实训课的课堂管理一直是一个令老师头疼的问题。教学方法陈旧、教学形式单一、实训与实际的脱节,使得学生的学习积极性受挫,学习效果也大打折扣。本文将我校餐饮实训课老师在实践中摸索出来的教学方法进行整理,取名为“竞赛教学法”。主要操作路径就是实训老师根据实训模块,设计合适的竞赛项目,在实训课上组织学生以小组为单位进行技能竞赛,以达到实训预设效果。此法能激发学生的学习兴趣、协作精神和竞争意识,同时也能彻底解决实训课堂难管理的问题。
Catering Service and Management is a core vocational ability course of hotel management major in secondary vocational school, which requires students with high practical ability. However, the prevailing reality is that classroom management of Catering Courses has always been a headache for teachers. Outdated teaching methods, a single form of teaching, practical training and out of touch, making students frustrated learning enthusiasm, learning effectiveness is greatly reduced. This article will be my school catering training course teachers in practice to explore teaching methods for finishing, named “competition teaching method.” The main operation path is that the trainee teacher designs the suitable competition project according to the practical training module, organizes the student to carry on the skill competition in the trainee class in the trainee class, in order to achieve the premeditated effect of training. This method can stimulate students’ interest in learning, collaboration and competition, but also solve the difficult problem of classroom management completely.
