基于地理学视角的饮食文化研究——以重庆火锅为例

饮食文化是人在社会发展过程中对食物需求、制作和消费方面的文化现象进行提炼而得到,不仅涉及到饮食本身,还包括饮食与商业、文学及艺术等的关系,深厚广博。地理学对饮食文化的研究主要从饮食文化的地区差异、地理环境对饮食文化的影响及饮食文化所反映的人地关系等方面进行。本文在简要综述饮食文化研究的基础上,以重庆火锅为例,着重研究地理环境对重庆火锅形成与发展的影响,分析重庆火锅的特点及蕴含的饮食文化内涵,同时探讨重庆火锅体现的人地关系及对其饮食文化的开发利用问题。 Food culture is derived from the cultural phenomenon of food needs, production and consumption in the process of social development. It not only relates to the diet itself, but also includes the relationship between food and commerce, literature and art. Geography of diet culture research mainly from the regional differences in food culture, geographical environment on the impact of food culture and food culture reflects the man-land relationship and so on. Based on a brief review of the research on diet culture, taking Chongqing hot pot as an example, this paper focuses on the influence of geographical environment on the formation and development of hotpot in Chongqing, analyzes the characteristics of Chongqing hotpot and the connotation of dietary culture, Relationship and the development and utilization of their food culture.
